In Amiel’s own words, here are his Top 5 Chefs of the World.
1. Gordon Ramsey
“At first I didn’t like him because I thought all the chefs on the TV are only about business and showing off. However, after looking at his work, and realising that he his restaurants have 14 Michelin Stars, I realised that he is an exceptional chef, and more than just someone on TV.”
** Michelin stars are given to restaurants with the highest consistent standards of service, quality of food and overall ambience. They are awarded by a team of anonymous food critics, and are one of the most coveted pieces of recognition that a restaurant can receive **
2. Thierry Marx
“Thierry Marx is a specialist in molecular cuisine and won the award for the best restaurant in the world a couple of years ago. In my own cooking I don’t tend to like to use huge amounts of molecular cooking, but when it’s used as a light touch to enhance the dish or change the texture it’s a bit of fun. It’s also a very interesting surprise for the customer!”
3. Alain Ducasse, Joel Robuchon, Paul Bocuse
“I am cheating a bit by putting three chefs here, but they are the fathers of French cuisine!
Robuchon won the best cook in the world, and has been awarded the Chef of the Century, as well as having restaurants in many countries, and been awarded the most Michelin Stars of anyone in the world.
Ducasse wrote a fantastic book on traditional French cuisine, that has all of the basics you would need. Even during his time, he already had a view of the modern ways of cooking. Although traditional in the preparation, the product and flavour is fantastic!”
4.) Olivier Roellinger
“I grew up on the seaside, so for me, any chef who specialises in seafood will always be one I admire. Olivier has three Michelin stars, but closed that restaurant. He opened another restaurant called La Maison de Bricourt, and was offered a Michelin star, but refused it because he didn’t want his restaurant to become too commercial. He wanted to keep it about the food, and I truly admire that.”
5.) Anne Sophie Pic
She is the only girl who has 3 Michelin stars in France. I admire her hard working ethic, and despite patriarchal pressure, she has managed to be very successful.
